Making tortillas is a fun and easy process. All you need is time because all the ingredients are readily available in your kitchen.
Are you dying to have those tacos and quesadillas? Here is what you will need to make your tortillas:
184g all-purpose flour
50g maize flour
50g corn oil
128g water
½ t salt
Directions
Combine the maize flour, all purpose flour and salt in a bowl. Add in the corn oil and mix until it resembles breadcrumbs.
Gradually add in the water using the well method and mix the dough. Use a wooden spoon or your hands.
Mix the dough well and knead for 7 to 10 minutes, then section the dough by neatly rolling it into 40g balls. This recipe should yield 10 balls.
Rest your dough for up to 15 minutes. Ensure that it is tightly sealed with cling film to avoid air pockets.
When ready, heat a flat pan, roll out the dough into a flat, thin circle and place on a hot pan. Don’t overcook the tortilla. Cook each side for up to a maximum of two minutes.
Store the tortillas between two sides of a clean cotton cloth placed inside a zip lock bag or container.
Use the tortillas for tacos, quesadillas or even burritos!
Bonus tip:
To make tortilla chips, cut the cooked tortillas into thick strips then cut into diamond shapes which you then deep fry in hot oil.
